These homemade, oven baked tortilla chips are super easy! They cut out the hassle of making chips from scratch but are more nutritious than store-bought corn / tortilla chips.
These high protein tortilla chips are the perfect healthy addition alongside cheese, Mexican-style dips or even fresh nachos! Using whole wheat / corn tortillas is a cheap and easy way to get fresh Mexican Tortilla chips at home that are actually good for you! And unlike the chips you find in the supermarket, you won’t feel empty after an hour!

ARE TORTILLA CHIPS HEALTHY?
Store bought tortilla / corn chips are often deep fried. The tortilla chips absorb some of the oil, making them higher in fat. Additionally, store bought tortilla / corn chips are also made with added sugar and salt, and not much else nutritionally.
WHY THESE ARE HEALTHY TORTILLA CHIPS
Nowadays, it’s very easy to find nutritious wraps or tortillas at most supermarkets. I think tortillas / wraps make better tortilla chips than store bought, and they come with many benefits such as:
- Wholegrain or wholemeal wraps often provide significantly more protein than store bought corn or tortilla chips.
- These wraps are also higher in dietary fibre, promoting better gut health than storebought corn or tortilla chips.
- Wraps, particularly whole grain options, tend to be lower in fat and may contain healthy fats from seeds.
- Store-bought corn or tortilla chips are typically high in salt, whereas wraps usually have much lower sodium, making them a better choice for heart health.
- Wraps contain much less added sugar than store-bought corn / tortilla chips.
- Wraps are generally less processed and more nutrient-dense than store bought corn or tortilla chips. In Australia, they are fortified with vitamin B1 (thiamine).
Recipe suitability
While it may not look like it, this tortilla chips recipe is high in fibre, with a whopping 11.8g per serve. This makes them a a great choice for gut health. It also contains 13.6g of protein per serve, making these tortilla chips a high protein recipe. On their own, they are not low in fat or sodium, it is still much lower than store bought tortilla chips or other wraps. However, they are low in cholesterol. These tortilla chips are also low GI and contain less than 15g of carbohydrates per serve, making them diabetes friendly. This recipe is also adaptable to be gluten free and vegan.
Tortilla Chips Ingredients
- Wraps / tortillas – Preferably whole wheat / whole grain. I used Simson’s Pantry’s Low Carb High Protein and Fibre wraps, as they contain significantly more protein fibre and less sugar and sodium. They may seem expensive, but they cost AUD$1.55g (USD$1.04) per 100g, whereas store-bought corn / tortilla chips can be anywhere from AUD$1.7-2.24 (USD$1.14-$1.5) per 100g. - Extra virgin olive oil – I used an extra virgin olive oil spray to lightly and evenly coat the tortilla chips. Extra virgin olive oil is rich in monounsaturated fatty acids. Studies have shown that replacing saturated fats with monounsaturated fatty acids may help reduce risk of cardiovascular disease.
- Seasoning – See options listed below.
What seasoning to put on Tortilla Chips
Jazz up your Tortilla Chips by adding a touch of gourmet seasoning for extra flavour! Listed below are a few different flavour combinations:
Chili & lime
- 1/4 (for mild)- 1 tsp+ chili / cayenne pepper powder (for SPICY!).
- Zest of 1-2 limes
Smokey & spicy
- 1 tsp smoked paprika
- 1/4 tsp cayenne / chili powder
- Zest of 1-2 limes (optional)
Vegan cheese & garlic
- 1-2 tbsp nutritional yeast
- 1/2 tsp garlic powder
Mexican
- 3/4 tsp smoked paprika
- 3/4 tsp oregano
- 1/2 tsp cumin
- Zest of 1-2 limes (optional)
Coriander lime
- 1/2 tsp ground coriander
- Zest of 1-2 limes
Everything bagel
- 3/4 tsp sesame seeds
- 3/4 tsp poppy seeds
- 1/3 tsp garlic powder
- 1/4 tsp onion powder
Lemon & black pepper
- Zest of 1-2 lemons
- 1/2 tsp cracked black pepper
Curry
- 1 tsp curry powder
- 1/4 tsp garlic powder
Note: Curry powder can contain a lot of excess sodium. I recommend choosing a curry powder with the lowest sodium per 100g.
How to make Tortilla Chips
IN THE OVEN
- Preheat oven to 180°C / 350°F.
- Stack your wraps / tortillas together on a chopping board and cut them into chip-sized pieces using a sharp knife.
- Line a baking tray with baking / parchment paper. Place your wrap pieces onto the baking tray so they do not overlap. Spray the pieces lightly with the extra virgin olive oil spray and sprinkle on half of the seasoning.
- Place the baking tray into the oven and bake for 8-10 minutes, or until golden brown.
- Remove the tray from the oven and flip the wrap pieces over. Spray with extra virgin olive and sprinkle on the rest of the seasoning. Place the wrap pieces back into the oven and cook for a further 3-5 minutes, or until golden. Repeat steps 3-5 with the remainder of your tortilla chips.
- Take your baked tortilla chips out of the oven and set aside to cool. Serve the tortilla chips once cool enough to touch.
Other ways to make Tortilla Chips
AIR FRYER
- Preheat the air fryer to 180°C / 350°F, if needed.
- Coat the wrap pieces in a light spray of extra virgin olive oil on both sides.
- Place the wrap pieces on the air fryer tray / or in the basket. Bake in the air fryer for 6-7 minutes or until golden brown and crispy.
- Remove the baked tortilla chips from the air fryer and set aside to cool.
Note: If you have a basket style air fryer, you will need to make the tortilla chips in small batches.
Storage
Homemade Tortilla chips are best eaten the day they are made (especially when warm). However, you can store them in a zip-lock bag or airtight container at room temperature for 1-2 days.

Store bought tortilla chips often contain excess fat, sodium, and sugar, which is not beneficial to our health.
If your tortillas are made from corn, whole wheat or wholemeal flour, then they are whole grain.
It will depend on which tortillas / wraps you buy. Tortillas are more likely to be corn based, but they will likely still contain some flour. Meanwhile, wraps tend to be more flour-based. I recommend checking the ingredients before buying.

Yes, you can! But you will miss out on all the benefits of the extra virgin olive oil.
I would recommend sticking with wraps / tortillas that are lower in carbs and higher in dietary fibre and protein. These wraps / tortillas should have a lower GI compared to others.
Absolutely! Homemade Tortilla Chips are quick, easy, and much better for you than store-bought ones!
This comes down to personal preference. If you prefer flour tortillas, use them, if not, go for the corn tortillas. Either way, ensure that the tortillas / wraps you use have a decent amount of protein and fibre (and not too much sugar or sodium).
Other dietary
Gluten free – Swap the wraps / tortillas out for a gluten free variety.
Diabetes friendly – Choose wraps that are low carb and high in protein and fibre. The wraps I used for this recipe would suit.
Vegan / dairy free – Swap the wraps / tortillas for a vegan option.
Tips
Coat your tortilla chips as evenly as possible with the extra virgin olive oil spray. The more even you spray, the more even they cook!
Don’t leave your tortilla chips unattended. It only takes a short time for them to go from being under to overdone. If they become too golden brown, they may taste slightly burnt. I recommend checking them at 8 minutes on the first side and 3 minutes on the second side.
Your tortilla chips may still have a coating of extra virgin olive oil when you remove them from the oven. If you want to reduce the amount of fat, you can soak up that extra oil with some paper towel. Otherwise, the oil will disappear on its own.
